Happy Australia Day 🇦🇺

My Mum is Australian and it was her country's national day last Friday. To celebrate we made lamingtons which are a popular cake Australian's eat. It's a vanilla sponge sandwiched with raspberry jam and then coated in chocolate icing and coconut. They are delicious. They are really easy to make although we made a giant mess with the coating!
